Apple Crisp...

You can't go wrong with a big pan of Apple Crisp...sometimes to cheat a little when I am pressed for time I just open a jar of our canned apple pie filling to use for the filling. When time allows it is completely worth it to take the time to slice the apples though...

- apples~peeled and sliced
- 1 cup white sugar
- 4 Tbsp flour blend
- 1 tsp cinnamon
- 1 cup water

* Topping:
- 1 cup brown sugar
- 1 cup oats
- 1 cup flour blend
- 2/3 cup vegan butter

* Mix together apple mix and pour in 9x13 cake pan
- mix topping together and sprinkle on top of apples
- Bake at 350' for 40-50 minutes
~ serve warm over ice-cream!

Gluten Free Soft Taco Shells...

These are soft and very tasty soft taco shells. My daughter enjoys eating these plain as a snack. They are quick and easy to mix up. This recipe only makes about 8 tortillas...so if making for a crowd be sure to double it!
 -3/4 cup flour blend
- 1/2 tsp xanthan gum
- 3/4 cup masa harina
- 1/2 tsp salt
- 2 Tbsp shortening
- 1/2 cup warm water {I used more}

* Mix fours, xanthan and salt together
- add shortening- mix in with a fork
- slowly add warm water to mixture while mixing
- knead dough until smooth
- cover with towel and let rest for 30 min
- after 30 min divide in 8-10 parts
- roll into a ball. Using a press or rolling pin, flatten ball between 2 sheets of wax paper- roll quite thin
- Cook each tortilla over medium heat in non-stick skillet for 20 seconds on each side
- keep pressing air bubbles out with spatula
{cooking in skillet...I kept my tortillas fairly small. I love the un-even edges!}

Cinnamon Roll Baked Oatmeal Cups...

I am not a fan of oatmeal...but this is so yummy! A perfect bedtime snack! Super simple to make...I made ours even more simpler by simply using a jar of cream cheese frosting!

- 1/2 cup applesauce...we used our chunky homemade sauce
- 1/2 cup rice milk
-1/2 vanilla
- 1 tsp cinnamon
- 3 Tbsp maple syrup {we used regular ol' syrup since we don't keep the maple syrup on hand!}

*Frosting:
- 4 Tbsp Powdered sugar
- 1/4-1/2 vanilla
- 1-2 tsp dairy free cream cheese

*Mix together oats, sauce, milk, vanilla, syrup and cinnamon in large bowl.
-Lightly grease small serving bowls- pour mixture into each bowl
- bake at 375' for 15-20 min
*Blend together frosting and put dollop of frosting in center of each oatmeal bowl after finished baking.
~top off with a garnish of cinnamon...

Apple Pie Filling

This is the second year that I have used this recipe for canning apples. It is the same recipe my Mom uses. It makes the best apple pies and apple crisp. I am getting hungry just looking at the picture!
* 3 1/2 cups white sugar
* 1 cup brown sugar ( 1 cup white + 1 Tbsp molasses)
* 1 cup cornstarch
* 1 Tbsp + 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1/4 tsp cloves
* 1/4 tsp all spice
* 2 tsp salt
* 10 cups water

* Mix all ingredients together in big kettle and bring to boil over medium heat until sauce thickens.
* Add 3 Tbsp lemon juice once removed from heat.
* Peel, core and slice enough apples to fill 6 quart size jars
* Pour sauce over packed apples...pour a little at a time to allow the sauce to drip down. Be sure to leave about 1/4" head room.
* Seal jars with lid and rings
* Process in water bath for 20 min

Granola

This is a recipe that my sister gave me...and I have no idea where she found it. It is very good...it has such good flavor. I ate this every day for snacks when I was pregnant...the molasses added just enough extra iron to my diet to keep me feeling good!
*4 cups Gluten Free Oats (we use Red Mill)
* 1/2 cup dried Coconut
* 1 cup Nuts (we skip this due to nut allergies)
*2/3 cup Brown Sugar (1cup white+1Tbsp molasses)
* 1 tsp Cinnamon
* 1 tsp Ginger
* 1/2 tsp Allspice or Nutmeg
* 1/4 tsp Cloves
* 1/4 cup Molasses
* 1/3 Oil
